Ice Machine Cleaner vs. Sanitizer: What Commercial Kitchens Must Use and When

Ice machine cleaner removes mineral scale; sanitizer reduces microorganisms on already cleaned food-contact surfaces. When both are required, descale first, complete the machine manual’s drain and rinse steps, and then sanitize at the label concentration and contact time. Never combine the chemicals. Use only products approved for the exact machine and follow its OEM manual, chemical label, and SDS.
The practical distinction is simple:

Cleaner and sanitizer solve different problems#
Commercial ice-machine cleaner is usually a descaler. It reacts with deposits left when minerals in the incoming water concentrate and adhere to the water circuit or evaporator. Depending on the product and machine, the formulation can contain acids that make calcium-containing scale soluble enough to flush from the system.
Manitowoc’s cleaner-and-sanitizer bulletin describes its cleaner as a citric- and phosphoric-acid product used to remove lime scale and mineral deposits. The same bulletin assigns a separate job to sanitizer: controlling algae and slime growth and disinfecting the machine. It also says that the two functions are equally important but separate.
Sanitization addresses microorganisms, not hard-water deposits. A sanitizer must reach the applicable surfaces at the required concentration and keep them wet for the labeled contact time. Scale, soil, and established biofilm can obstruct access to a surface. This is why sanitizing is not a substitute for cleaning and why the normal sequence puts soil and scale removal first.
“Biofilm” is often used loosely in maintenance discussions. For planning purposes, treat visible slime or recurring microbial growth as a sanitation problem that can also require physical cleaning and component disassembly. Do not assume that a quick sanitizer circulation will penetrate all deposits or inaccessible parts.

Why the chemicals must not be mixed#
The first reason is direct: OEM instructions prohibit it. Manitowoc states that cleaner and sanitizer must not be mixed. Its manuals also require users to read the bottle labels and use the approved solutions according to those labels.
The second reason is chemical safety. Sanitizers can contain sodium hypochlorite or another antimicrobial active ingredient, while descalers can be acidic. CDC warns that chlorine bleach can release chlorine gas when mixed with some cleaners. CDC documentation specifically identifies acid and hypochlorite combinations as a chlorine-gas hazard.
Mixing can also change chemical concentration and effectiveness even when the combination does not create an obvious gas. Staff cannot establish a valid sanitizer contact time or label concentration after an unapproved chemical combination.
If chemicals are accidentally combined:
- Stop work and leave the affected area.
- Do not lean into the machine or try to neutralize the mixture.
- Keep other workers away.
- Follow the SDS emergency instructions and the site’s chemical-incident procedure.

A dust mask does not protect against chemical gas or vapor. Do not attempt spill response unless your training, protective equipment, and workplace procedure authorize it.
The correct sequence when both are needed#
There is no universal button sequence, dose, or circulation time. Controls and water-system layouts differ among cubers, nugget machines, flakers, and dispensers. Even models from the same manufacturer can use different cleaners, concentrations, and disassembly steps.
Use this framework only to understand the order. The exact OEM manual and chemical label control the work.
1. Identify the exact machine and approved chemicals#
Record the model and serial number. Obtain the current installation, operation, and maintenance manual for that model. Check its approved cleaner and sanitizer, material restrictions, dilution instructions, maintenance interval, and component-removal procedure.
Nickel-plated evaporators and other sensitive materials can be damaged by an incompatible descaler or excessive concentration. “Ice-machine cleaner” on a bottle is not proof that it is correct for every machine. 2. Read the labels and SDS before opening either product#
The product label tells you where and how the chemical may be used, its dilution, required contact time, rinsing instructions, precautions, and storage or disposal requirements. The safety data sheet, or SDS, provides hazard, first-aid, handling, incompatibility, spill-response, and protective-equipment information.
For an antimicrobial sanitizer sold with pesticidal claims in the United States, the EPA pesticide label is legally enforceable. EPA explains that pesticide labels define who may use a product, where and how it can be used, how much to apply, and how often it may be used. Using the product inconsistently with its labeling violates federal law.
Verify that the sanitizer label covers the intended food-contact surface or ice-machine use. An EPA registration number by itself does not mean every possible use is permitted.
3. Take the machine out of service and remove the ice#
Prevent service during maintenance. Follow the OEM procedure for placing the machine in OFF, CLEAN, or service mode. Remove or discard all ice from the storage bin or dispenser as instructed. Do not return ice that was present during chemical maintenance to food service.
Hoshizaki’s KM cleaning sheets, for example, direct operators to remove all ice before cleaning and sanitizing. They also specify control-switch timing and warn against leaving the machine unattended while panels are off. These details show why a generic procedure cannot replace the model sheet.
4. Descale with cleaner#
Prepare only the quantity and concentration specified by the cleaner label and machine manual. Add it at the stated point in the cleaning cycle. Allow the automated cycle or manual circulation to finish.
Where instructed, remove water-contact components and clean them separately. Use only approved brushes or cloths; hard tools can damage plating and create surfaces that are difficult to keep sanitary.
More chemical is not better. Manitowoc warns that excessive cleaner concentration or overly frequent acid cleaning can be corrosive. Maintenance frequency must respond to the OEM schedule and actual operating conditions, not a generic calendar alone.
5. Drain and rinse exactly as directed#
Complete all cleaner-drain, flush, and potable-water rinse steps before sanitizer enters the machine. Hoshizaki’s KM-201/KM-260 procedure, for example, tells staff to rinse removed parts and the bin thoroughly with water before proceeding to the sanitizing procedure.
Do not add a rinse when a later sanitizer label prohibits it, and do not omit a rinse that the cleaner or OEM instructions require. The applicable step can change between the descaling and sanitizing stages.
6. Sanitize separately#
Prepare a fresh sanitizer solution at the label concentration. Apply it to all surfaces named by the OEM procedure, including removed water-contact parts and the bin or dispenser where specified. Keep the surfaces wet for the full labeled contact time.
Do not estimate concentration by odor or appearance. Use the measuring method and, when the procedure calls for it, the concentration test method specified by the product label or food-safety program.
7. Rinse—or do not rinse—according to the exact instructions#
“No-rinse” is a conditional label direction, not a general property of all sanitizers. Manitowoc’s product bulletin describes its approved sanitizer as no-rinse in the stated procedure. Other products or contamination-response procedures can require potable-water rinsing.
Follow the sanitizer label and model-specific OEM procedure together. If they appear to conflict, stop and ask the chemical manufacturer or equipment manufacturer for written guidance.
8. Reassemble, restart, and manage the first ice#
Reconnect only the parts and guards removed by the documented procedure. Restore water and electrical power in the required order. Check for leaks and correct operation.
Follow the manual on discarding ice produced after maintenance. At minimum, all ice removed before or exposed during chemical service stays discarded. Some exceptional procedures require additional batches to be thrown away. For example, Manitowoc’s contaminated-water guidance advises not using the first two batches after its specified recovery process. Do not automatically transfer that instruction to routine maintenance or a different model.

PPE and safe handling#
Do not select personal protective equipment from a generic article alone. Read both chemical SDS documents and both labels because the cleaner and sanitizer can have different hazards.
As one OEM example, Manitowoc manuals direct users to wear rubber gloves and safety goggles, or a face shield, when handling its cleaner or sanitizer. Hoshizaki’s ScaleAway cleaning sheet warns that the product causes severe skin burns and eye damage and tells users to observe the bottle precautions.
Before starting, confirm:
- The correct chemical-resistant gloves are available and undamaged.
- Eye or face protection matches the label and SDS.
- Ventilation meets the product instructions.
- Measuring containers are dedicated, labeled, and compatible.
- Both chemicals remain in their original labeled containers.
- Potable rinse water is available when required.
- Staff know the first-aid and spill procedures.
- The machine’s electrical isolation procedure is understood.
Tip
Keep the model manual, current product labels, and SDS documents together in the maintenance record. Record the date, chemicals used, concentrations, contact times, rinse steps, ice discarded, and the employee or contractor who performed the work.
When to call a trained service professional#
Stop and use an OEM-authorized or otherwise qualified service professional when:
- Staff do not understand the procedure, safety precautions, control sequence, or electrical isolation steps.
- The manual reserves the procedure for qualified service personnel.
- Access requires work near live electrical parts, refrigeration components, sharp evaporator surfaces, or other hazards outside staff training.
- The wrong chemical was used, products were mixed, or plating or other components appear damaged.
- Scale remains after the approved process or returns unusually quickly.
- Slime, odor, or suspected biofilm returns after complete cleaning and sanitizing.
- The machine has a leak, fault code, abnormal harvest, reduced output, or another condition that chemical maintenance does not correct.
- A water-cooled condenser is internally restricted by minerals. Scotsman manuals assign this acid service to a qualified service agent.
- The machine was exposed to floodwater, sewage, a boil-water event, or another contaminated supply. These events need an OEM contamination protocol and coordination with the local health or water authority.
Manitowoc instructs users who do not understand the procedures or precautions to call local service support. Its flood guidance also says equipment submerged for an extended period or exposed to sewage or chemical contaminants can be nonrepairable. Routine descaling instructions are not sufficient for those events.
A practical maintenance decision#
Use cleaner when the documented problem is mineral scale. Use sanitizer when the procedure calls for microbial control. Use both—separately and in the OEM sequence—during scheduled maintenance when the manual requires both.
Do not choose a chemical by color, odor, bottle size, or a claim that it is “commercial strength.” The defensible decision uses four documents:
- The OEM manual for the exact model.
- The cleaner label.
- The sanitizer’s EPA-accepted label, where applicable.
- The current SDS for each chemical.
That approach protects the machine, gives the sanitizer a valid chance to work, and prevents staff from improvising with incompatible chemicals.
